Training
From Brasília to New York
Paulo Tarso is from Brasília. He studied culinary arts at The Culinary Institute of America in New York, and completed his training with specialisations in Food and Beverage Management and in Hospitality at Montgomery College, in Maryland.
That double choice explains much of what the house is today: the kitchen and the dining room are treated with the same care.
The years away
United States and Peru
He lived four years in the United States and worked in kitchens such as The Restaurant, at the Four Seasons in Palm Beach, Florida, Gigi’s Trattoria in the Hudson Valley, Bocuse in New York, and Fine Gastronomy Catering in Washington.
He then moved to Lima, where he built a catering and private chef service for embassies and corporate groups, and ran the restaurant Tr3s Cocina Peruana. That is where he came close to Peruvian cooking, which is still present in his work.
The house
Tarso, since 2023
He opened Tarso in Asa Norte in 2023, with a single format: menu confiança, of five or nine courses, the same for the whole table, changing completely every three months.
There are sixteen seats a night, Wednesday to Saturday, dinner only. In 2024 the house was the only restaurant in Brasília on Exame’s list of the hundred best in Brazil, and it was named the best in the city by Exame Casual that same year and by the Crítico Antigourmet ranking in 2025.
