Chef
Paulo is a chef from Brasília with extensive knowledge in international gastronomy, thanks to his excellent education and global experience.
Educated in culinary arts at the prestigious The Culinary Institute of America in New York, and with additional training in Food & Beverage Management and Hospitality from Montgomery College in Maryland, Paulo established a solid foundation for his career.
His professional journey began in the United States, where he lived for four years and worked with renowned restaurants such as The Restaurant at Four Seasons in Palm Beach, Florida, Gigi’s Trattoria in Hudson Valley, NY, Bocuse NY, and Fine Gastronomy Catering in Washington, DC. These experiences shaped his culinary approach and reinforced his love for gastronomy.
After his time in the USA, Paulo ventured to Lima, Peru, where he launched his catering and personal chef service, serving an exclusive clientele that included embassies and corporate groups. During this period, he also managed the restaurant Tr3s Cocina Peruana, where he deepened his appreciation for the rich Peruvian cuisine.
He is the chef and owner of TARSO, an exclusive tasting menu restaurant designed to offer an intimate and artistic dining experience for a limited number of tables, currently operating only two days a week.
His involvement goes beyond the kitchen, participating in private events, consulting, and serving as a partner chef for the French brand Le Creuset in Brasília.
Paulo has a reputation for excellence, proven by his participation as a speaker at prominent events like Capital MEATing and his collaboration in renowned events such as Surreal, Brunch GPS, and workshops for Rede Globo, L'Oreal, Land Rover, among others.

Uma das mais gratas surpresas gastronômicas na minha (já experiente) vida. Simplesmente sensacional! Menu degustação (não harmonizado) de 9 pratos, sendo 4 servidos como entradas, 3 como principais e 2 como sobremesa. Todos servidos e didaticamente explicados pelo próprio chef. Importante: você pode levar seu vinho sem custo (sem taxa de rolha). Poucas vezes saboreei uma sequência tão harmônica e crescente em potência. Do 1o ao último prato, sempre o próximo superando a expectativa deixada pelo último. E o serviço e o ambiente também excelentes! Como são poucos lugares disponibilizados exclusivamente mediante reserva, recomendo fazê-la o quanto antes. Como é relativamente novo (uns 7 meses), a fila não é grande...ainda!

What dishes are featured on the menu?
The menu is revealed course by course during the experience.
I have dietary restrictions and/or allergies; can I dine with you?
At the time of booking, there is a field to add any possible restrictions. We will do our best to adapt the menu to your taste and needs.
Can I make reservations for large parties?
Our dining room is very exclusive, with a maximum capacity of 12 guests per night. We accept reservations for up to 4 people per table. For larger groups, please contact us for possible accommodations.
What is the cost of the menu? Are there any additional costs besides that?
The price varies with each new menu. The current menu costs R$ 690 per person, with a 15% service charge and an R$ 150 corkage fee.
Can I cancel or modify my reservation?
Cancellations or rescheduling are allowed up to 3 days before the reserved date.
